February 25, 2023Take a walk through yesteryear with our generations old recipes for St David’s day.
On March the 1st households all over Wales will be reviving their grandparents’ traditional recipes to honour St David. Using locally sourced ingredients, Team Cwtchie are cooking up a family treat to celebrate our patron saint.
Traditional Welsh Cawl Recipe:
This hearty family meal is best served the day after first cooking and keeps well for up to two days.
500g Welsh beef or lamb, cubed
1 large onion, diced
3 large potatoes
4 carrots
1 small swede
2 leeks
Salt and pepper to taste
Method:
•Place the meat and onion into a large pot. Season with salt and pepper. Cover with water. Bring to a boil then simmer for 45 minutes.
•Meanwhile, peel and chop the vegetables into bite sized pieces.
The vegetable ratio is shown in the photograph below.

•Add all of the vegetables except for the leeks. Return to a boil, then simmer for 35 minutes.
•Add the leeks, bring to the boil then simmer for a final 30 minutes.
•Serve with crusty bread and cheese.
Mam’s Welshcake / Pice Man Recipe
This beloved recipe was handed down by my grandmother who was the very best cook in all of Wales.
1lb plain flour
0.5 lb butter or margarine
9oz sugar
2 eggs
Handful of sultanas
Pinch salt
2tsp baking powder
Milk as necessary
Method:
•Add sugar, salt, baking powder and fruit
•Rub the butter (or marg) and flour together to form a bread crumb consistency
•Add beaten eggs and milk until moist ( not wet!)
•Roll out to half inch thickness and use a cutter to create rounds
•Cook until golden on a griddle plate or frying pan.
•Serve warm or cold
•Once cooled, will freeze for up to 3 months.
